Red Caviar

Red caviar is obtained from fish of the salmon family, such as chum salmon, sockeye salmon, coho salmon, pink salmon, and sea trout. Black caviar is expensive because sturgeons must be kept in aquaculture, fishing for these fish is prohibited, and it takes a long time for them to produce caviar. In 2024, black caviar prices range from €71.00 to €284.00 per 100 grams. This caviar is listed in the Guinness Book of Records as the most expensive in the world.

Why is Caviar So Expensive?

The production of this delicacy involves more than just immediate harvesting; production costs, packaging, and transport also play a role. The price is set annually, but due to the current crisis, it will increase. At the end of the season, during the low period, prices are formed. Trout and sturgeon caviar are generally more stable in price because these species are farmed in aquaculture.

Types of Black Caviar and Their Prices

  • Beluga Caviar (Huso huso): The most expensive of all varieties. The grains are about 3.5 mm in size. It is difficult to find this type of caviar in stores because it is considered elite. The price for 100 grams of this delicacy is approximately €284.72.
  • Osietra Caviar (Acipenser gueldenstaedtii): This delicacy is characterized by medium-sized grains with a diameter of 1.5 to 2 mm and a rich color ranging from dark gray to bluish-black, giving a pleasant visual impression. However, the most important advantage of this variety is its incredible taste. Salted caviar with only 35 grams of salt per kg. Undoubtedly a bestseller. The price of this caviar is at least €118.63 per 100 grams.
  • Siberian Sturgeon Caviar (Acipenser baerii): The smallest type of product, usually not exceeding 1.5 mm in size. The taste is pleasant but has a certain spiciness. It is usually sold for at least €76.27 per 100 grams.

Types of Red Caviar and Their Prices

  • Trout Caviar: Because this type of salmon is farmed, trout caviar is also easily accessible and is not considered rare. Trout eggs are small and often stick together. The colors range from dark yellow to purple. The taste has a distinct bitterness. It is sold for €21.78 per 250 grams.
  • Pink Salmon Caviar: The easiest to find on store shelves. The simplest and cheapest type of caviar, most often seen at festive tables. The grains are medium-sized and orange in color. Size: up to 5 mm. €8.10 per 100 grams.
  • Keta Caviar: The most delicious among all varieties of this delicacy. It has an orange-red hue, sometimes up to 9 mm in diameter. It has a richer taste than other types of red caviar. Due to its special composition, chum salmon caviar stands out for its taste: delicate, creamy, without the bitterness sometimes present in other types of red caviar. Keta salmon caviar is one of the taste standards among delicacies. This caviar costs €9.20 per 100 grams.
