It is widely known that caviar is an expensive product. There are many reasons why caviar is a rare and exclusive delicacy. Production requires a considerable investment of time and money. Caviar prices can vary significantly due to various factors, such as the type of caviar, the country of origin, the harvesting method, and even the age of the fish. Therefore, it is impossible to determine a general price for caviar.

Depending on the type of fish used and the preparation method, these categories are further subdivided.
Red caviar is obtained from fish of the salmon family, such as chum salmon, sockeye salmon, coho salmon, pink salmon, and sea trout. The different types of caviar are distinguished by their size, color, and taste. Chum salmon has the largest eggs, amber-orange in color, with a diameter of about 7 mm. This caviar is known as “royal caviar” because of its delicious flavor. In second place is pink salmon caviar, which is medium-sized and light orange in color. In 2024, red caviar prices range between €7.00 and €15.00 per 100 grams.
Black caviar is produced from sturgeon fish, such as beluga, sturgeon, and sevruga. Beluga is often the most expensive and lightest (from dark gray to silver-gray). The lighter the shade, the higher the product’s value. Sturgeon caviar has a light aroma and a yellow, green, or brown hue. Black caviar is expensive because sturgeons must be kept in aquaculture, fishing for these fish is prohibited, and it takes a long time for them to produce caviar. In 2024, black caviar prices range from €71.00 to €284.00 per 100 grams. This caviar is listed in the Guinness Book of Records as the most expensive in the world.
The production of this delicacy involves more than just immediate harvesting; production costs, packaging, and transport also play a role. The price is set annually, but due to the current crisis, it will increase. At the end of the season, during the low period, prices are formed. Trout and sturgeon caviar are generally more stable in price because these species are farmed in aquaculture.
